Established in 2008 in Chicago it’s the city’s first distillery since the mid-1800’s. The founders Robert and Sonat Birnecker, who are from Austrian origin, wanted to leave their academic careers for an adventure in distilling and to bring the distilling traditions of Robert’s Austrian family to the USA. The name Koval means Blacksmith in many Eastern European languages, but in Yiddish it also refers to a ‘black sheep’ or someone who forges ahead or does something new or out of the ordinary. It reminds them of Sonat’s great-grandfather who at the age of 17 decided to move from Vienna to Chicago pursuing the American dream and starting with his own business in the early 1900’s. It also refers to Robert’s grandfather who’s name was Schmid, the German version of Smith, for it was his grandfather who taught him the art of distilling.

Koval Dry Gin is made out of a variety of woodland botanicals. It has a fresh nose of juniper berries but it’s nuanced by the other botanicals giving that this gin has a floral body. Production happens organically and in a small batch.
