The Copper House, sits within the Adnams brewery in Southwold. It’s the most energy-efficient distillery in the UK and also generates water and steam for the brewery, forming an integral part of our overall sustainable production system. The distillery was built and opened in 2010.

Adnams Copper House gin is distilled from three locally-grown grains: barley, wheat and oats. Fergus Fitzgerald, Masterbrewer, makes a beer ‘wash’ which is fermented to around 6% abv without the addition of hops. Head distiller, John McCarthy, takes this beer and puts it through a column which removes all the alcohols to create a ‘low wine’. The ‘low wines’ are subsequently distilled in our hand-made copper rectification columns to create a clean, pure spirit. The very purest portion and only that of the spirit is drawn off; the finest cut. The spirit is then returned to the copper pot still to be redistilled and infused with thirteen carefully chosen botanicals, narrowing these down from an original seventeen!

It took the Master Distiller spent several months experimenting with different blends before finding the signature First Rate flavour.
